Roasted giant beans with sausage

Oh my, it’s snowing! I’m not joking, it really is snowing! Some of you might be thinking: “So what? It’s just snow”. But that’s not the case, not at all!

Oh my, it’s snowing! I’m not joking, it really is snowing! Some of you might be thinking: “So what? It’s just snow”. But that’s not the case, not at all! Even though we live in the northern part of this lovely country, snow doesn’t visit us very often. We haven’t seen that much snow in Thessaloniki for years!

Naturally, this is a very festive day for me! As I’ve mentioned before, I’m 100% positive I was a husky in my previous life. I’m sure you can imagine my excitement!

In recent years, I have noticed that snow has made its appearance in any other part of the country –even the most southern parts- besides Thessaloniki! It’s almost like a circle surrounding the city, protecting it from the snow! What an incredible sabotage, a great conspiracy against me! By the way, I’m not the only one who has noticed this disappointing change, other huskies share the same opinion as well!

That’s why I’m so unbelievably happy today. Not only is it snowing but it’s also Friday! And I’m ready to do what I love doing the most whenever I’m extremely happy or sad; get in the kitchen and start cooking! All my cooking utensils and colorful ingredients are already set in my most beloved corner of the kitchen, next to the window. The view is just breathtaking!

 

I’m using today’s snowy weather as an excuse to make a very popular recipe, favoured by many. I always share a very realistic image of what’s going on in my kitchen anyway and today is no exception. And that’s what’s going on today; Roasted giant beans (also known as gigantes) with sausage!

It is one of the most traditional and delicious dishes –and definitely suitable for a cold day like today. We love beans and couldn’t think of a better idea for today’s lunch. And since it’s freezing cold, we’ll enrich this recipe with some sausages. Yummy!

I’m almost certain that we’ll be snowed in by tonight due to heavy snowfall! We have a plan though.. We’ll open another bottle of red wine, relax around the fireplace and enjoy the astonishing view of the snow-covered scenery and the shimmering Christmas lights. Can’t complain!

Ingredients

500gr giant beans

3 medium onions

6 bay leaves

½ cup olive oil

3 garlic cloves

2 medium carrots, chopped

1 celery  root and its leaves

1 celery stick chopped

2 medium hot chili peppers

1 jar/ 400ml tomato sauce

½ bunch of  parsley, chopped

3 sausages cut in half and slashed

salt, pepper

Method

1. The previous day. Soak the beans and leave them in the water all night.

2. Place the beans, one onion and 2 bay leaves in a deep pot. Boil them for about 1- 1.30 hour.

3. Place your roaster on the hot plate and add half of the olive oil. Brown 2 chopped onions. Add the garlic, the chili pepper, carrot and celery and brown them for a few minutes. Add the beans (after you’ve drained them), the tomato sauce, celery and parsley.

4. Add 2 glasses of warm water and the rest of the bay leaves, cover your roaster, put it in the oven and cook for about 1-1.30 hour. 30 minutes before you remove the roaster from the oven, add the sausages on the surface, leave the roaster open and continue cooking. Allow the roaster to cool down for 30 minutes before you serve.
